Chicken Vegetable Salad

chickenvegIngredients:

2 cups green leaf, red leaf, romaine, and butter lettuces

½ cup red cabbage, shredded

¼ cup jicama, julienned

¼ cup carrots, julienned

1 green onion, sliced thinly

2 radishes, sliced thinly

1 stalk of celery, sliced thinly

1 2-4 oz chicken breast

1 clove of garlic, macerated

2 tsp coconut oil

Sea salt and pepper, if desired

 

Preparation:

Rub chicken breast with the macerated garlic; add salt & pepper, if desired. Rub the bottom of a heavy sauté pan with the coconut oil & sauté the chicken over medium heat, turning once. Cook thoroughly and remove from skillet to cool. In a large bowl, combine all of the vegetables. When the chicken is no longer too hot to handle, slice into thin strips and add to the bowl of vegetables. Toss with vinaigrette. Makes one serving.

Herb Roasted Chicken

Whole chicken 1 Tbsp. garlic powder 1 Tbsp. onion powder 1 Tbsp. dried oregano 2 Tbsp. paprika 2 Tbsp. dried parsley 2 tsp. rubbed sage 2 tsp. dried thyme leaves 1 tsp. ground coriander 1 tsp. celery seed 1 tsp. sea salt 1 tsp. pepper 1⁄2 tsp. cayenne pepper (or to taste)
6 cloves of crushed garlic 2 quartered onions

Instructions:
Preheat oven to 325 degrees. Mix together all seasonings in bowl. Stuff garlic and onions into chicken and rub seasoning mix on chicken. Cook for 2 hours or 20 minutes per lb.

Chicken Soup

chicken soupIngredients:
3 organic chicken breasts
1-cup water 1 clove of minced garlic 1⁄2 medium onion (chopped)
3⁄4 tsp. salt
1⁄2 cup celery (chopped) 1 medium carrot (chopped)
1⁄4 tsp. pepper 1 whole bay leaf

Instructions:
Combine all ingredients except celery, carrot and bay leaf. Cook over low heat for 25 minutes. Add remaining ingredients then cook for 15 more minutes (or until chicken is tender).

Chicken Chili

2 lbs. ground chicken 2 medium onions (chopped)
2 red peppers (chopped) 6 cloves of minced garlic 1 tsp. cumin Salt Oregano 2 cups chicken broth

Instructions:
Combine all ingredients except for chicken broth and cook until chicken is done. Add chicken broth and cook until heated thoroughly.
